Country Fried Steak and Egg (Big Green Egg)

Monday night I was watching Diners, Drive-ins and Dives and saw some really good chicken fried steak. I was real hungry for it. We had some sirloin in the fridge that needed to be used soon. So I cut it into thirds and pounded it out to thin in down. Then I seasoned with Plowboys Bovine Bold, dredged in flour with cracked black pepper and kosher salt, then an egg/milk wash and back to the flour. While I was doing this I had my enamel cast iron pot warming on the Big Green Egg. I added some vegetable oil and cooked each piece one at a time for about five min per side at 450 dom. While I did that, Dawn made homemade mashed potatoes and gravy.
If I did this again I would use a thinner cut of meat so it will cook faster and I would also go heavier on the flour dredge. Overall it wasnt a bad first attempt.
Oh Deer

My cousin Doug gave me some backstrap from a deer he just butchered. I seasoned it with Dizzy Pig Raising The Steaks and also added some garlic powder and kosher salt. I dredged in flour and put on the cast iron on the Big Green Egg. i used about 1 cup of butter in the cast iron. These things cooked fast. Maybe 2-3 min per side. Very tender and not very gamey. Thanks Doug.
Wings

This is about 3 1/2 pounds of smoked wings. I grilled them for a out 1 1/2 hours with a rub of Jamaican Firewalk by Dizzy Pig and then when done I sauced them with Anchor Bar medium sauce. Anchor Bar is the home of buffalo wings and seeing their sauce at the store I wanted to give it a try. Little too mild for me, but the wings were good.
New Addition to Buster Dog BBQ

Here is our latest addition. Another FEC-100 pellet cooker. The difference between this one and the other one I have is this unit is reversed. It has the pellet hopper and controls on the right side and the exhaust on the left. It had been trailer mounted, so I need to put it on some wheels to move it around. Very happy with this purchase. The main use of this will be catering and some farmers markets next season.
Red Robin California Chicken w/ Blue Cheese Fries

When we go to Red Robin I usually get the California Burger. So today I decided to make it at home. Grilled chicken topped with Swiss cheese, bacon, home made guacamole. I then used some left over bacon and mixed it with some Marzetti’s blue cheese and some blue cheese crumbles. to top some fries.
Pecan Pie

The BBQ Brethren site had a weekly throwdown for pies and cakes so I decided on making a pecan pie. Somethign I have never done before. Basically you beat 4 eggs, 1/2 cup corn syrup, 1/2 cup sugar, 1/2 cup brown sugar, 1/2 tsp vanilla and pour into a 9″ pie pan that is lined with chocolate ships and 1 1/2 cups of pecan.
Homemade Chicken Salad

I had an extra package of boneless, skinless thighs from the Jambalaya I made, so I seasoned them with Plowboys Yardbird and diced them all up when they were done smoking. Then I cooled and chilled the chicken and put in the fridge. Got it out tonight and mixed it with some fat free mayo, red onion and celery. Some of the best chicken salad I have ever had.
Jambalaya Pizza on the Big Green Egg

I was going to make some Jambalaya for the week and decided I would hold back some of the ingredients for a pizza. To get ready, I smoked some andouille sausage links, then some boneless, skinless chicken tighs with Todds Bayou Dirt. When those were done, I used a pita for the crust and added some red onion and a red bell pepper along with some Cayenne pepper. Topped with the andouille, chicken and some precooked shrimp and topped with cheese. Then onto the Green Egg or about 10 min. Good stuff.
