Quesadillas and Fish Taco

I have been beta testing a new cooking tool in the XL BGE this week. I wanted something easy, so we made some grilled cod for fish tacos and had some shrimp that I diced up with some andouille sausage for some quesadillas.
Kid vs Food

Dawn wanted to go out to breakfast so we went to Jethros. David got the pancakes. Wow. His jaw hit the floor. He finished about 1/2 maybe.
Mahi Mahi

Showing we do eat healthy on occasion, tonight we had grilled Mahi Mahi with grilled Mango, steamed zuccini and yellow squash, and fried rice. First time I ever made Mahi Mahi. It came out a little dry. The mango was a great touch. I also had some pineapple on there. Personally I am more of a fan of more steak like cuts of fish like Tuna. But I will definately have fish with mango on it again. My next fish experiment will be blackend in a cast iron.
Meat Slicer

Last year on black Friday, JC Penny had this on sale for like $29.99. Normally a meat slicer is over $100. So we went ahead and bought it just to see how we would use it, etc. Well, finally got a chance to using this for the first time on a store bought ham. The slices were about the width of a pencil. It didn’t do too bad. The real issue is the motor. It was kind of hard to cut a slice that thick. The little plastic deal would be nice if it mounted someway to keep the meat firmly pressed on the blade. BTW. this is Cooks brand. Oh, Yeah. I already know I am beyond help for posting a link of a meat slicer.

Pork Loin
Feb 15th
We haven’t had pork loin in a while. Dawn picked up this three pounder from Hy-Vee. I injected wtih about 8oz of apple juice then rubbed with John Henry’s Pecan Rub. I smoked this at 325 with some cherry and pecan for almost an hour until it was around 150 internal. Finished off with Blues Hog. While it was moist, it lacked a real good pork taste. Thanks Hy-Vee.
Generator

Well, I have been wanting to get a generator for quite a while. Most of the BBQ contest have power but last season we had an issue with a few contest where we got unplugged once, were told we ran too long of an extension cord at another, and had no power at a third. Plus sometimes these contest have so many people plugged into a transformer I am surprised they don’t burst into a ball of flames. So last weekend we went to an RV Show at the Iowa State Fairgrounds and they had a show special on this Kipor generator. It is a clone of the Honda but cost about $500 less. It will power the air and other power in our trailer. While weighing 135lbs, it is on wheels (unlike the Honda). The other nice thing is that it only puts off about 60 decibles which is about a normal conversation. I fel bad last year in Ankeny. We borrowed a generator and you could hear it throughout the contest.

I wonder if this is at 7-11. Can you imagine filling up the Big Gulp cup with tasty Bob Evans Sausage Gravy?
