American Royal

Just got home from the American Royal. In case you never heard of it, the Royal is the largest BBQ contest in the US and is held at Kemper Areana in Kansas City, Mo. Around 600 teams will be cometing this weekend. There are actually two contest. The first is the Invitational. To be inlcluded you have to win a contest. The second is the open which anyone can enter. This is the day following the invitational. This year’s invitational had 106 teams cooking.
Friday night was crazy. This is a party night for most people and many teams have a sponsor party. Friday night there is also an award for the best party. The streets were filled and you could barely walk down the road. I got there Friday early afternoon and had a chance to visit with a lot of people I had only talked to via the web. If you get a chance to go, do it.
River City Round Up – The good, the bad, the ugly

This again provided to be a pretty fun contest and you couldn’t ask for better weather.
Let me first jump into the good part. First, the contest organizers did a fantastic job. They delivered ice to you, picked up your trash and ran through the awards like they had places to go. It was one of the most well run contest I have been to. Friday night was a peoples choice. We were given pork loins to serve to the public. The event raised $1500 for 4H I also met a lot of people from the BBQ Brethren forum. BBQ people are some of the best around.
Now the bad. There were some real characters out. First the team across from us was all the way from Texas. They were super nice and helpful people but they played country music so loud I couldn’t hear my own music. It wasn’t just the music, it was 1970’s era country music that makes you want to get drunk and kick the dog. Each twang from George Jones’ guitar sent a shivver up my spine. Then we had the rednecks in front of us. Let me explain. Our spot was 40′ long but to get the ramp down I had to unhithc my truck. Well, the people in front of us also had a camper and backed up right in front of us. Not a big deal usually. Except these people didn’t realize after you turn in your last item you start packing up. Or after the awards you start packing up. They had about 10 people standing around and only about two doing any work. We waited for well over an hour on them before I could get hooked up and out of there.
Then there is the ugly. Scoring. Not sure what it is in the Council Bluffs/Omaha area with the judging, but it was the lowest of the year. We were 75 points off our season average. I thought we had the best overall cook of the year too. We finished middle of the pack with only a top 10 in sausage which was an optional category. To put the scoring in perspective (scale is 0 to 180), of the four main categories, only one of them had more than five teams score over 160. A majority of the scores were under 150. In most Iowa competitions, scores of 150 an under are usually less than 10 teams, not 30 or more like this one. For as much fun as this contest is, I just can’t see further entry in here with such low scores. What that tells me is the judges are too critical and over think the entry or they were not properly trained on what to look for. Our friends from Iowa also cooked this contest and faired similar to us. They had been in the top 3 overall the last 3-4 contest prior to this one. I am sure they feel the same way.
Season Finale – River City Roundup – Omaha

Friday and Saturday, September 26 and 27 is the season finale for Buster Dog BBQ. Our last contest of the year. We will be in the parking lot outside the Qwest Center in downtown Omaha. This was a pretty fun contest last year and from what I heard there are 50 teams this year. Last year we finished with 3 top 10’s and 8th overall. This year sausage was added as a category so we will smoke a fatty.
Oh, by the way. Friday night they have a people’s choice. Last year we got 8 racks of ribs to cook for a buck a bone. We will be participating in this as well.
Independence Brew B Que Wrap Up

What a great weekend in Independence. You couldn’t ask for nicer weather. This is one of my favorite contest just for the fact that there is tons of power available and the sites are huge.
The contest grew to 33 teams this year with 2 no shows. On Saturday they have a beer festival with many samples avalable. This also grew to 90 beers this year. That brought quite the crowd. Saturday we also provided lunch to Dawn’s family and had quite a good turnout.
Now as far as the BBQ. Lesson learned. Didn’t cut the ribs on foil this time and guess what? 6th place. That was kind of nice to get back in the top 10 considering the Dubuque issue. We tried a different sauce on the chicken as we have not had great luck up in that area with ours. Not quite good enough to get in the top 10 with it. Overall our only call was in ribs but we did finish 12th overall. This was the last competition in Iowa. It was also the last contest for Ken Nelson, the KCBS rep. Ken does a great job at contest and always stops by to chat. Ken has done a great job keeping things moving at these. Good job Ken.
Independence Brew-B-Que

This weekend uster Dog BBQ will be competing in the Independence Brew-B-Que held in Independence, IA. This is a pretty fun contest. On Friday night they have a cooks potluck. Then on Saturday after turn ins they have over 100 adult beverages available to sample.
Dawn’s got a lot of family up in that area so I am sure we will be able to share most of the leftovers.
I really hope to get back on track after the foil incident in Dubuque. Time’s running out to get the chicken rating higher.
Are you ready for some football?

NFL season starts this week. Here are some ideas for your next tailgate or just sitting in front of the TV. These can be done with gas or charcoal grills.
Appetizers
Smoked Bologna
Go to your local deli or grocery store and get a chunk of 100% beef bologna about 3-4″ tall. Score some marks in the top and then rub with olive oil. Then apply your favorite rub all over it. Put on your grill at 250 for about 3-4 hours. It is already fully cooked so you are just heating it up. Server with a spicy mustard sauce.
ABT’s
Cut a jalepeno long ways and remove the seeds and stems. Fill the middle with cream cheese and a peice of meat like a little smokie. Wrap in bacon and grill at about 325 for 45 min to 1 hour until bacon is done. You can sprinkle rub on these. Also you can use any variation of filling you want.
Fatties
Get a roll of Jimmy Dean sausage and roll it in your favorite rub. Put on grill/smoker at 250 until temp is 170 internally. Slice and server warm or cold. You can also cut it open prior to cooking and fill with cheeses.
Meals
Flat Iron Steak
Second leanest cut of meat behind a tenderloin. Cook about 500 degrees until steak is medium rare (about 5 min each side). Great as fajita’s too.
Gumbo/Jambalaya
Get a box of Jambalaya mix. Cook ring sausage until warm then slice. Get 1 lb of large precooked shrimp and remove tails. Optional add in of ham or chicken. Follow directions on box for jambalaya and add in your ingrediants. Top with green tabasco sauce.
Ribs
go to Sam’s or Costco and get a 3 pack of baby backs or spares. Remove membrane and trim off fat. sprinkle with your favorite rub and cook at 250 for 5-6 hours until ribs fold in the middle when lifting. Apply sauce at the end.
Desert
Grilled Pineapple
Core a whole pineapple and cut off the outside. Cut the pineapple into large chunks and put in a zip lock bag with 1 cup brown sugar and 1 oz run. Leave in there for at least an hour. When ready grill at 350 until you get grill marks on the pineapple. About 10 min. Make sure to turn.
Mexican Smores
Use a tortilla and spread a thin layer of peanut butter all around including to the edge. Sprinkle a handful of small marshmallows and choc chips in the center and on one half. Lightly drizzle caramel sauce over the tortilla and then fold over and press around the edges. Grill at 325 until warm. Can be topped with whip cream, powdered sugar and honey.
Dubuqe wrap up

Couldn’t ask for better weather. It was sunny, mild and light wind. 37 teams showed up including the caravan of carnage which was about 6-8 teams who did a contest in Milwaukee and drove over afterwards.
As far as our results. Well, what if I said another top 10 finish for us? That’s what I would have said if our ribs were not disqualified. Yep. We had a small piece of foil in the box about the size of a pin head. It got stuck to the back of a rib when I cut them. To top it off both reps said the judges at that table said our ribs were the beat they had that day. So we finished last because of that. But after talking to other teams it seems like even the great ones have had a disqualification before. But had our ribs just been the average score we would have finished between 7 and 10th overall.
We stated at the grand harbor resort sat and sun where David enjoyed the indoor water park.
