Mid Winter Eggfest – February 16th

I am going to attend the 1st annual Midwest Eggfest in Council Bluffs the weekend of the 16th. If anyone is interested let me know. There will be 10 or so eggs going with a variety of foods ranging from seafood to bread to pork loin.Â
Judging Class March 1st

Dawn and I are taking a BBQ Judging class in West Des Moines March 1. I am excited to see what it will be like to be on the other side. I think we will try to judge the BBQlossal and maybe Up In Smoke in Mason City.
What I’ve recently cooked

Winter has given me a chance to try a few things I had not done yet. This last weekend I made leg of lamb. Not too bad if you like lamb. I sliced it very thin and we had gyros. Would have really liked a different kind of pita for it but all the store had was the pita pockets which fall apart.
I also made Canadian Bacon a few weeks ago. That is a two week process. You start with a pork loin and remove all the fat. The you put a special cure on it. It then sits in the fridge for five days, then you turn it. Finally after 10 days you remove and soak in water for 2 hours, smoke it until it gets to be 140 then let it sit for an hour. Pretty good stuff but a tad salty.
KCBS Team of the Year Rankings

Every year the Kansas City BBQ Society has their team of the year rankings. You get points based on the number of teams at a contest and by finishing in the top 5. Here is how we came out after our first year. The first number is where we ranked and the last is the number of teams which got a point.

July 11-12th Arrowhead Ducks Unlimited Contest

Buster Dog BBQ will be competing in the 6th Annual Arrowhead Ducks Unlimited contest July 11-12 in Ankeny, IA. Last year was our first time doing this contest. It was good in the fact it was close to home and we had people come out. It was also next to the Ankeny Summer Fest so there was some good entertainment. The bad was kind of two fold. One was they had no power available so you had to have a generator. The guy next to us had the loudest one made. No sleep for us. Second, there was a parade down the main street to the park entrance so you couldn’t get in or out.
The good news is we did finish first place in chicken. It was our first time getting a first place award. They also gave us a lot of free meat since we signed up early. Nice plus there.Â
River City Roundup
Jan 9th
Buster Dog BBQ will be competing in the River City Roundup September 26 and 27 at the Qwest Center in Omaha. Last year we took 6th in chicken, 2nd in ribs, and 8th overall. Click the link for more information.
17th Annual Nebraska State Championship

Buster Dog BBQ will be competing in the 17th Annual Nebraska State Championship Aug 22nd in LaPlatte, NE (just south of Omaha). Click the link for more info. This will be our first time participating in this contest.
BBQ in the Bluffs

Brew B Q added to the schedule

I have added the 2008 Independence Brew B Q to the 2008 Comp Schedule. This was a lot of fun last year. There was a potluck for all the cooks on Fri night and Saturday they had the beer garden open. Almost 100 different brews to try for 4 hours. Last year we took 4th place in brisket.
Fajitas

Made up these fajitas’s using a new cast iron pan Dawn bought me for Christmas. I had a dish similar at On The Border and really liked it so I tried to duplicate it. Came out pretty good. Red, yellow and green peppers sauted on the cast iron and then I grilled the chicken and added at the end and covered with cheese. Served with more cheese, guacamole, sour cream and a warm tortilla.
