Practice Turkey

I am making a 20 pound turkey for Thanksgiving. The only other time I did turkey was at Marshalltown in the state BBQ Championship where I finished 7th. Trying a new method called Mad Max turkey. Basically you ice the breast for 20 min before cooking then put a butter type paste on the bird. Cook until breast are 160 and thighs are 180. Takes about one hour per three pounds. I did this in about 3.5 hours at 325.

Sliders

Not quite White Castle but these will do. Made sliders for Sunday football. These are on a dinner roll. Just regular hamburger that I threw in the cast iron for about 3 min each side. Definitely will do again.

Why have a forum if you censor all the content?

One of the forums I used to like going to was the BBQ Forum.  A lot of the guys who compete post over on that forum.  It was not until I was at a competition that another cook told me about it.  The site is pretty helpful and just like any other forum there are a lot of the same posters.

After getting a feel for the forum I would post for time to time.  Occasionally when going back my post were not there.  Kind of odd.  Then one day a few weeks back I posted a link to an image on the Big Green Egg Forum.  Within an hour it was deleted.  I emailed the forum moderator and asked why.  Well had I read the rules I would have seen that they don’t allow links to other BBQ related sites, among other needed and not so needed and sometimes enforced rules.

The moderator called me and went into this long explanation that if he allowed those links it would take traffic away from his site.  I had to call him on that.  I highly doubt he would lose traffic.  Afterall, this forum is about BBQ in general where others like Big Green Egg and Treager or Weber for that matter are more specific to the cooker and the cooks. If you don’t have an egg why do you care about their forum?  Nonetheless he gave me this big speil about how the web stats and his 100,000 unique monthly visitors, etc.

Friday night I posted to an article about point systems, and did not mention any other sites or names, just question why they don’t use the point system another site uses.  Well this morning that post was deleted.  What is stupid is had someone asked “what is the site that keeps the rankings” according to the rules my post would have been ok.  Talk about a hypocrite.

The guy even had the nerve a few weeks ago to tell everyone that content results are property of his forum and accused people of posting them on other sites.  This despite the fact that the KCBS.US site post all results in a timely manner.

Oh well, my venting is done.   I think I will stay away from that forum from now on and not refer people to it as I had done in the past.

Flank Steak Rolls

If you have not had Flank Steak you should really consider it. When marinated, it makes an excellent cut of beef for fajita’s. In this case we pounded it flat then added spinach and some Mediterranean cheese to in and rolled it. It was pretty good. I would have cooked it about five min longer next time as a few areas were medium rare but had an awesome taste. I would also do more stuffing.

Grilled Chicken with Potatoes and Asparagus

I had a dish at Christophers I really liked so I tried to duplicate it. It it was a grilled chicken breast on top of red smashed potatoes and asparagus. They used a light cream gravy on theirs. I tried to duplicate that only minus the gravy. Turned out pretty good.
