Competition Cooking Vs Weddings

As I was at Cookies last week it occurred to me that a competition cook was much like a condensed wedding. Let me explain. Both of them have a lot of work to do up front. Then you have a period of time without a lot to do but drink beer (I would compare this to the bachelor party), then as the moment gets closer lots of people start showing up and the pressure is on to look your best. After you turn in the entries, you sit around and drink more beer. Yep, just like the reception. Finally everyone goes home.

This one’s for you David “O”

Just want to give a shout out to my dad. I can’t help but get a little chocked up thinking about what it would have been like having him here during the competition and winning those two categories. He loved to cook and I know he would have enjoyed this so much. I am not a big religious person but I would argue that in spirit he is responsible for me getting the BGE and getting into contests. Hell, I never worked in a restaurant industry or ever cooked for people other than family and friends and I am too young for a mid life crisis.

Cookies was a terrific host

I can’t speak enough to the staff of Cookies BBQ. They were great. Friday night they had a cooks dinner. We did not make it in time and actually got there as they were packing up. They did manage to scrounge up ribs and beans for us. On Saturday morning they came around with bacon and breakfast burritos for the cooks.

The contestant package was a bottle of all their sauces, some rub, an apron and a cook book. They provided power to us and with the wind so strong the offered the semi’s kitchen to cooks to prep their food.

During the contest they had a few of their cooks come around and help out/give advice whatever you needed.

After the awards they had beer and pop available for all the cooks and their families.

First Competition April 20-21

Well, this is what it is all about. Buster Dog BBQ will be competing in the first annual Cookies Classic BBQ competition in Wall Lake, Iowa. We will be cooking ribs, brisket, pork loin and some fatties. Wish us luck.

Pork Chops

Iowa Chops rubbed with Dizzy Pig Dizzy Dust. Maybe the most tender and flavored pork chop I have ever had. Cooked to 165 which is medium and acceptable for pork.

Bacon wrapped sirloin filet

8oz bacon wrapped sirloin. The close up is a little blurry but I did this on the small and got a great cook as far as a medium steak goes. The only problem is the meat was not the best grade.

Pork Loin

This is one of those Hormel pork loins that you see at the store. I cut them about an inch and a half thick and wrapped in bacon.  This is rubbed with Jamaican Firewalk.
