Tuna

Tuna steaks is one of the few types of fish I actually enjoy.  This guy has great instructions on searing and keeping the middle rare which is how you should eat tuna.  Had it this way once in San Diego and thought it was the best. Tried it at home a few weeks ago but let it grill a little too long.

This guy cracks me up.  He cooks soooo much food it seems like everyday.  He made this monkey bread in a clay pot.

Cocoa Powder in Chili

My dad used to make the best chili.  His favorite ingrediant was a can of beer.  I can across this thread from the BGE site and might try it. It uses cocoa powder in the chili. Supposed to take away some of the heat from the hot sauces and spices.  I like spicy food but not the kind that takes away from the food.

Buster Dog BBQ removes trans-fat

Effective March 1, Buster Dog BBQ will begin cooking beef, pork, seafood, and poultry without the use of trans fat.  In addition, MSG, Oregano, Rosemary, Bay Leaves, and Cocoa Beans will be eliminated from the cooking process. Replacing those items will be Crisco, Lard, Butter, Shortening, Peanut Oil and Coconut Oil. These changes are now in line to give you 100% recommended daily allowance of BS.

Buster Dog BBQ going to the meat lab

No, not some special kitchen concoction with beakers and bunson burners.  The Iowa State University Meat Lab has an annual BBQ Spring Training.  This event includes some of the best cooks in the nation covering basic and advanced BBQ techniques and methods.  A variety of smoker and cooker styles will be o­n display.  Best of all free lunch!  Time to do a little networking.

The event is March 24th and is an all day event.

Buster Dog BBQ has become an official member of the Iowa Barbecue Society for the 2007 year.  This is another step in making us competition eligible.

Super Sunday – It’s Freakin’ Cold

Super Bowl Sunday is here. Got the egg going.  Official temp at 12:15 pm – 1 degree and -18 windshield.  The egg is cooking along like a 70 degree sunny day.  Have wings on right now and ribs and fatties later.  Stay tuned.
