Super Bowl 41 Menu

It’s here at last. The Super Bowl. Been thinking about what the menu.  I think it will be ribs, potato salad and maybe some steak fries.  Doing Ribs because they only take 5-6 hours to cook so I don’t have to stay up all night and I don’t have photos of them on the web.  When the ribs are done I am going to throw on some fatties for the following weeks breakfasts.

Fish or Feesh? Depends on where you’re from.

I have always been amazed by people of Southern decent (by South I mean Creston, IA and lower) who pronouce fish as fees and wash as wersh. 

 

Anyway, I am doing my first seafood cook on the egg.  I have a pieced of Salmon I will do on a cedar plank, some Ahi Tuna, and two King Crab legs David wanted to try.  I will do these Sunday and put up some pictures for those of you in Wershington.

Cook info: 26 degrees outside and light wind.  Egg heated to around 400 degrees. Here is a pic of the salmon.  I am not a big Salmon fan but it was awesome.  I cooked at around 375-400 and the crab legs were awesome.  I will be buying more of them next time I go to Costco.  Here is a pic of the tuna which was slightly overcooked.  Next time I will do just sear it so it is raw in the middle.

Alder wood

I bought some Alder wood today that I plan to use on my initial seafood cook on the egg.  Alder is supposed to compliment Salmon as the Alder tree is found in the Oregon and Washington area.

Rub a dub dub – I got three new rubs

Primarily I have been cooking low and slow.  Meaning lots of pulled pork and brisket with a steak or chicken every now and then.  I have pretty much been able to use the same rub or a variety of one or two rubs for those.  Well, I am branching out a little bit.  This weekend I am going to make some fish (feesh if you are from the South).  So I went out and bought these three Dizzy Pig rubs – Swamp Venom, Tsunami Spin, and Shakin’ the Tree.

The Swamp Venom is described as: Based on influences all across the South, from New Mexico to Alabama, Swamp Venom has a punch of heat enhanced by a mix of deep south herbs, chilies and spices.

I will most certainly entertain this on some ABT’s! 

Tsunami Spin is described as: a unique offering, and depends on several mid and far eastern influences for its special flavor. The sesame seeds give it a buttery mouthfeel and help to build a beautiful crust, and the aromatic spices come through with a well balanced splash of flavor.

Shakin’ the Tree is so new there is no description yet but it is a lemon pepper rub that I intent to use on seafood.

How to cook a Colt

Saturday the Chiefs play the Indianpolis Colts in the playoff.  I am doing a seven pound brisket.  I wanted a bigger one so I can freeze some and have enough in case anyone drops by.  I also wanted a good meat to hold up to Gates BBQ.  Got to have the feel I am in KC Saturday. 

Since I will have to do this overnight I am also going to do a fattie about 5-6 am so it is ready around 8 for breakfast.  Depending on anyone dropping by I might make some abt’s.  Heck if the grill is going do it.  Go Chiefs!!!!!!!

Fatties

What is a fattie?  It is a sausage roll.  Now, when I set out to make these I was going to do them when I got home from the store.  Problem was all the store bought was frozen so I bought some Graziano’s Sausage and some Johnsonville Brats to make my own.  I also bought some Kraft cheese crumbles.  Mozzarella for the sausage and Colby for the brats. 

I then rolled them into a log and put in the fridge overnight to hold their form.  I put these on after the ABT’s were done and heated until 170.  Tasted pretty good. Just slice and eat.  Next time I am going to use some Jimmy Dean sausage at the end of an all night cook and make some fresh biscuts.  Should make a nice morning sandwich.

ABT ( Atomic Buffalo Turd)

Don’t let the name fool you.  These are jalepeno peppers cut in half, cored and then stuffed with cream cheese, a little smokey, wrapped in thick cut bacon and finally a sprinkle of chili powder.  They are only hot if you want them to be.  Coring the pepper and removing the seeds and veins will make it not hot.  These turned out great for a first try.  They even reheated in the microwave pretty well.  Not much heat on them and although I thought I washed my hands very well afterwards I still managed to run my eye and had the feeling it was going to pop out of the socket it burned so bad. 

Click here for the finished product. Definately something I will make again.  Maybe next time I wil stuff with a flavored cream cheese like pineapple and and then fill with ham and wrap with bacon.
